The FDA allows growers and food manufacturers to make positive health claims for foods that are good sources of potassium. A good source is defined as a food that contains at least 350 mg of potassium per serving. If it also contains no more than 140 mg of sodium and is low in fat, saturated fat and cholesterol, then that potassium rich food can claim to help reduce the risk of developing high blood pressure or stroke. Many fruits and vegetables, including orange juice, bananas and white potatoes meet these criteria.
