This is an easy one, and one you can make ahead and freeze! Take a large square of foil (12 x 12) and put a small hamburger patty in the middle. Season with salt, pepper, garlic powder and whatever you like. Add around the patty 1/4 cup whole kernal corn (drained), 1/4 cup diced potato. You can add/delete what vegetables you want - I usually use corn, potato, and carrots. Roll up the foil around the patty and seal well. Cook in a 350 degree oven for 1 hour. When done, hold over the sink and poke a couple of small holes in your foil bag on the bottom and let the fat drain out. Makes a good meal, and you can cook several with different veggies or using different meats, such as a chicken breast or pork chop! Freeze them and take out as needed. Just pop back in the oven for a re-heat until ready!
Sounds pretty simple to prepare.
Especially if you're single. Cooking when you are alone can be a drag.
