[color=indigo:0c1065456a]I made up a dish that I can barely keep my kids out of. I use enough EVOO or spray to be able to stir fry veggies and brown rice in a skillet. Broccoli, red & yellow bell pepper, purple onions,carrots, whatever you like best. I spice it with a little salt, garlic, and the spicy Mrs. Dash. If you'd like to add chicken or pork, or even lean steak it makes it that much better. Give the veggies, meat and rice a quick stir fry to make sure all the flavors are incorporated then instead of cooking the rice and veggies in water use, light, low salt chicken broth. Cook until all the broth is gone and the rice and veggies are tender. Voila with a side salad or fruit and that's all you need.[/color:0c1065456a]

Thanks for that one. With the grilling season almost here, shish-kabobs are on my mind! I love to grill those up!
