I found this one in the AHA Quick and Easy Cookbook. Good source of fiber and low in fat. Ingredients: 1/2 Cup All Purpose Flour 1/4 Cup Whole Wheat Flour 1/2 Teaspoon Baking Soda 1/4 Teaspoon Salt 1/4 Teaspoon Ground Cinnamon 1/8 Teaspoon Ground Nutmeg 1/2 Cup Firmly Packed Brown Sugar Egg Substitute that equals 1 Egg 3 Tablespoons Veggie Oil. (Avoid palm and coconut oils) 1 1/4 Cups Quick Cooking or Regular Rolled Oats 1/2 Cup Wheat Germ Preheat Oven to 350 F. In a small bowl, stir together all flours, baking soda, Salt, Cinnamon, and Nutmeg. Set Aside. In a large bowl, combine Brown Sugar, Egg Substitute, and Veggie Oil. Stir well until combined. Stir in Flour Mixture, Oats and Wheat Germ. Drop dough by tablespoons about an inch apart on a baking sheet. Flatten them slightly to make a 2 inch diameter with a the bottom of a glass or with your hand. Bake for 10 minutes, or until lightly browned. Cool on wire racks. If you have any left over you can store these in your freezer for several weeks! Per Serving 2 cookies has: Calories: 116 Total Fat: 4g Sat. Fat: 1g No cholesterol Sodium: 74mg Carbs: 18g Protein: 3 g I have always loved cookies, so this was a no brainer for me! Hope that if you try it, you'll love it! :)
