This is great for a snack. You can also modify the seasonings to your tastes. You will need: 24 ounce cottage cheese. Your preference of large curd or small (There are also reduced fat kinds that you could use, if you like) 2 roma tomatoes, remove seeds and dice. 6 medium green onions. slice thinly. 1 medium cucumber. Peel completely, and remove seeds. Dice. 1 teaspoon seasoning of your choice. (Lawrys salt or Pepper are what I use.) Put all ingredients in a mixing bowl, and mix well. This is a great side dish to serve with grilled chicken or tuna salad. This is great in the summer as a "cool lunch" :) Bon' Appetit!


I don't usually eat cottage cheese but this sounds really good. I need to eat more calcium rich foods, I'm not a big fan of milk, cheese or yogurt. So, I'll give this a whirl! Thanks for the idea! Ellie


Glad that you want to give it a try. If I'm feeling indulgent, I serve it up with a shrimp cocktail. Something different to have if your ever in the mood :)
