I cut my chicken breast in half (thin) so they cook faster, then spray with Pam cooking spray and sprinkle with cajun seasoning. Heat a cast iron frying pan for about 5 minutes until very hot. Great idea to have a exhaust fan above your stove for this one! Then put your chicken breast in hot pan, only takes a few minutes on each side. No added fat, hot pan seals in juices! Since you cut the chicken breast in half you have enough for 2 meals! Pretty spicy. I've used this method for pork chops and salmon as well, just as yummy. EllieFunt


Thanks for that! I don't have a cast iron pan, does that make a difference? I do have an electric skillet. Do you think that might work about the same?


I would think that would work the same since you can get it to a high heat, you need to sear in the juices.


Cool. I'll have to be sure to crack a window! I can't tell you how horrible it is when I accidently set off a fire alarm!


You don't have to tell me about smoke alarms! 2 kids screaming and a dog howling above the alarm is not fun. Enjoy! If you're not watching carbs (which I don't) I usually serve my cajun dish with a zatarans (spell?) red beans & rice and lots of veggies. Ellie

Why not? Lemon Pepper? Just make sure that salt isn't the first ingredient listed. Garlic? You just gave me some great ideas. For my kids I spray the chicken with Pam and sprinkle with bread crumbs and "fry" in my trusty cast iron frying pan. Then they dip it in fat free ranch dressing. Ellie
