tonight I took 1 boneless frozen chicken breast cut it into very thin strips fry this in spray canola oil on no stick pan( I havent bought a qt of oil in about 4 months!!)
added about 1/6th of a red pepper cut in thin strips a 1/4th of a sweet onion 1/4th cup frozen corn and and 8 oz container of leftover instant white rice and 1 canned green chili(old el paso)
I added in a can of diced tomatoes drained and then used the reserved liquid to "steam" everything else.
I spooned this onto a tortilla shell(heated on a pan with spray oil) topped it with low fat shredded cheese and fat free sour cream and salsa they were delicious and each went for about 280+- calories out of this recipe I fed 3 people approx 9 well filled tortillas!
filling for 1/9th of recipe is approx 55 calories
small diameter tortilla 160 calories
add in toppings( cheese sour cream salsa)

i 'll have to give that one a try. it sounds really tasty for an evening such as this.
Forgot I used montrel chicken seasoning in it also If you havent tried this seasoning by mc cormic DO I love it and it is great for lots more than chicken !! :D

I made something like that for dinner the other night.
I used those precooked chicken strips made by Louis Rich and it was ready in a snap..
Chicken is the cheapest of meats around here so my family has a lot of it. It can sometimes get repeditive. I will definatly try your recipe to try and shake things up.

.. Or use Oriental Vegetables and seasonings instead ..
Like:
Water Chestnuts, Snow Peas, Carrots, Broccoli.. maybe some szechuan or sweet and sour sauce..
