This one is quick and easy to make and it requires only a few ingredients.
What you'll need:
1/2 Pound Snow Peas. But off stem end, and remove strings.
1/2 Pound Fresh Mushrooms. Cut stem, and slice thinly.
1 Large Yellow or Red Peppers, cored, seeded, and sliced thinly.
6 Tablespoons Bottled Lite Italian Dressing.
Salt and Pepper to taste.
Blanche "cleaned" snow peas in boiling water for 1 minute, or until they are bright green. Drain. Plunge Peas into ice water. Drain again and place
peas on a paper towel and then pat dry. Cut pods in half and place in a medium salad bowl. Add sliced Peppers and Mushrooms. Toss Lightly, then add dressing, toss lightly again. Add seasonings if desired. Serves 6

This is a nice side dish for grilled chicken or fresh fish. Light and Tasty!
I had that with dinner last night, and it was excellent.
I did change one thing though by adding just a bit of fresh chopped garlic. ( I love garlic)
