could some please tell what kinds of vegtables u can eat on the adkins diet


Hi hopein :welcome Atkin's doesn't really restrict any food. It more or less limits the total amount of carbs you take in in one day. Most vegetables aren't high in carbs so for the most part you can eat most of them.


There are a few restrictions concerning vegetables, Hank. For example, I consider potatoes a vegetable, but those, because of their high starch content, are not "allowed" on the Atkins diet. Likewise any other vegetable (I believe squash is another example) high in starch is not allowed early on. Correspondingly, fruit, because of its high fructose/sugar content, is restricted early on as well.


If you are just starting Atkins then you are probably in the induction phase. You can't have very many vegetables and the ones you can, you can't eat a whole lot of. The vegetables you can have are broken down into 'salad vegetables' (2 to 3 cups per day) and 'other vegetables' (One cup per day if salad doesn't exceed 2 cups). You have to make sure you count any carbs in ANY of these vegetables! You are correct, Doc. I mis-spoke. Atkin's definitely has a few big restrictions as you mentioned. I haven't consulted the Atkin's books in awhile, so I dug them out and refreshed my memory. I also refreshed my memory on why I'm not sold on low carb diets. I re-read the bit on ketosis and have to admit, the argument is only slightly compelling that ketosis is healthy long term.

Depending on what stage you are at on the diet will determine which veggies you can and cannot eat. (There are still quite a few, though! :wink: ) The only ones that you have to avoid until the very last stage are potatoes, corn, carrots, some varieties of squash and cabbage. It all really depends on your body and how well it tolerates certain carbs. For example, with me, I can now eat small amounts of shredded carrots on a salad but forget eating potatoes- my ass would swell up like a blown up balloon! :lol: Whatever you do, stick with it! I know Atkins has worked wonders for me so far. I have lost 50 pounds! I t hasn't been easy, but with a little support and this website, it's all worth it! Check out the Atkins website: www.atkins.com
