4 fish filets. Cod, Perch or flounder work well. About 1 1/2 pounds. 2 tablespoons Olive Oil 1/4 cup chopped celery 2 tablespoons chopped onion 1 tablespoon chopped fresh dill or basil 1 tablespoon chopped fresh parsley 1 1/2 grated lemon rind 2 tablespoons lemon juice Salt and pepper (optional) Preheat oven to 350. Lightly coat a baking dish with olive oil. Rinse fish filets and pat dry with a paper towel. Heat olive oil in skillet over medium heat. Add celery and onion saute until soft (about 10 minutes) then add basil/dill, parsley, lemon rind and lemon juice. Season with salt and pepper if you'd like. Put fish filets in the oiled baking dish. Equally distribute the herb mix on each filet. Bake for 30-40 minutes until fish is opaque and flakes with a fork. Just wanted to Say thanks. Made this dish for my boyfriend last night. He loved it. Just wanted to say thanks. And also to let you know if you like to grill you can do this on the grill in alomunium foil, for 10 minutes, all you have to do is cover the fish in the lemon (and salt and pepper if you choose.). Glad to hear that you and your friend liked it so much! I never really cared for fish that much myself, but I've been trying to add more of it to my diet. It is low in fat, calories and packs a lot of protein.. so anytime I find a fish recipe that is good I'm happy! Just something different than the old tuna fish sandwich :)
