Who doesn't love Sausage? I certainly do.. especially if its made out of Chicken. Chicken sausage is lower in fat and calories than pork sausage.
Here is a recipe that is sure to to please! I found this in Dr. Atkins New Diet Revolution and absolutely love it!!
This serves 4.
What you will need:
~1 1/2 tablespoon oliveoil, divided.
~8 Precooked chicken sausages.
~1/2 red onion, thinly sliced.
~1 red bell pepper, cut lenghtwise in to 1/4 inch strips.
~1/2 teaspoon dries thyme.
~3 garlic cloves, chopped.
~salt and pepper to taste.
1. Heat 1/2 tablespoon oliveoil in large skillet over medium-high heat. Add sausages and brown on all sides. Remove and transfer to a plate.
2. Add remaining oliveoil to skillet, over medium low heat. Add onion, red pepper and thyme. Cook for about 8 minutes stirring occasionally until veggies are soft. Add chopped garlic and cook for another minute or two.
3. Return sausages to skillet and cook for about 10 minutes to let flavors blend. Before serving, flavor with salt and pepper.

I had that one for dinner last night! I added some extra peppers, because 1 just didn't seem to be enough.. Served it up with some white rice and it was excellent! :wink:
