With winter just around the corner, I thought I would share this recipe.( I found this in Dr. Atkins New Diet Revolution, so please credit them!! ) as there is nothing quite like a nice bowl of soup on a chilly evening. If you would like to only prepare 2 servings, split the ingredients in half.

* 2 cans (14 1/2 oz. each) reduced sodium chicken broth
* 2 thin slices fresh ginger (optional, recommended as it gives oriental flavor)
* 2 eggs beaten
* 2 green onions, chopped
* 1/2 teaspoon sesame oil
1) Bring broth and ginger to a boil in a small saucepan.
2) Hold a serving spoon upside down over the pan and slowly pour the eggs over the spoon so that they drip ribbons into the simmering soup.
3) Add chopped green onions and sesame oil. Remove ginger and serve immediately.
Carbs: 2 Grams
Protein: 6.5 Grams
Fat: 4 Grams
Calories: 74

I have tried this recipe and it is good! A bit of advice though, when it says to pour the eggs slowly over the spoon, pour the eggs slowly!!! I ended up with clumps of eggs...but it was still good!!!! I usually make this when we have chinese food night. I make chicken stirfry and this on the side for myself!
