Olive Oil is my preferred oil of choice. Olive oil contains 14 grams of fat/ 120 calories (1 tablespoon) Compare this to butter, which has 12 grams fat/ 100 calories for the same 1 tablespoon. Olive oil contains more MONOSATURATED Fatty Acids and Butter has more saturated fatty acids..
Olive oil has a lot of "healthy fat", so that is a great suggestion. Some people also cook with white wine. The alcohol will burn away, but you can still saute your food. Alcohol has 7 calories per gram (fat has 9 calories per gram; and protein and carbs only have 4 calories per gram), but since you'll burn it away while cooking, that will help keep calories down. Might try it once to see how it works for you.
I forgot all about White Wine. Thanks for reminding me! I found some oil that I really like.. It's Extra Virgin Tea Tree Oil. It adds a very nice flavor to veggies. I like to put it over asparagus, instead of hollindaise sauce that is packed with calories.. :!:

Olive Oil is best and South Beach Diet prefers that over butter and any other oil.
I like a bit of sesame oil to spice things up a bit every once again.
Whenever a recipe calls for some oil or butter etc. I've tried many different types to find the healhty an tasty one that i like an actually extra virgin olive oil seems to work best for me i just recommend buying a small container of it an try it cause if you dont like it then you wont be out much money.
In my studies for a low fat diet, I've found a little extra fat actually helps you eat less and feel full faster. Olive oil is a great choice- but if you really want to cut out the fat I'd suggest using a non-stick saute pan. No oil necessary or at the very least a little cooking spray. They make a nice olive oil flavor now too.
you can saute theings with chicken broth, just a little bit and it also has a great flavor, if you don;t want the cal. from the oil. :D Dawn
I agree that Olive oil is best for flavour, but you can get really good results sauteing in stock or wine as suggested. Sue Kreitzman's (spelling?) Low Fat Cookery books have excellent recipies for Low Fat versions of favorites food- roasts, ice creams, potatoes. Her emphasis is on great tasting food without the grease. Give them a try if you can find a copy.
I use a combo of non-stick cooking spray - sometimes butter flavored - and some 99 percent fat free broth- works good and adds flavor. Otherwise - depeding on what you're cooking -I'm with the rest on olive oil and sometimes i use peanut oil.
