This is just a recipe I made up when I was trying to find something different for lunches. This is really filling and staves off those hunger pangs a lot of us get at the office around 2-3pm
2 cans whole albacore tuna - drained (the pouch kind works awesome too)
Filler:
1 can garbonzo beans - drained and rinsed
3 dill pickles
2T chopped onion or more to taste
2T lemon juice
Put filler ingredients in a food processor and pulse them until the garbonzos are chopped fairly fine.
If you don't have a food processor you can chop the onion and pickles very fine, and mash the garbonzos with a pastry cutter or fork.
Mix the tuna and filler in a bowl with a fork
To bind add 2T mayo (I use fat free) and mix until incorporated. Use as little mayo as you can get away with. One trick I found out, is if you have too much liquid or mayo in the mix, toss in a small handful of prepared breadcrumbs and it soaks it all up and holds everything together.
Something about the garbonzos really makes these so much more filling. You can anything else you like to it. Be creative, add boiled egg or capers... I usually make pita sandwiches with this. Just line the pita with a couple leaves of lettuce and put in maybe a 1/4 cup of tuna salad, then top with diced tomatoes if you feel festive. :D
by the way* I've yet to find a good tasting fat free mayo. The only one I can find is made by Kraft and it has almost no flavor to it. If you've found a good one, let me know. Anyone try soy mayo ??

Never heard of soy mayo, although I enjoy soy milk!
