So many people are afraid of tofu, but you don't have to be. It's high in protien and really delicious if you know what to do with it. The secret to great tasting tofu is marinating it.
Take your basic vegetable stir-fry and add marinated tofu.
Here's how:
Buy a 14-16oz container of extra firm tofu
Drain and cube it in half inch pieces.
Then pick a marinade, any thing from a low sodium teriyaki or a fat free ginger lime salad dressing. It's all good.
Place the cubed tofu in a tupperware container and fill almost half way with the marinade, and the rest of the way with water. Tumble the tofu in the marinade until it's mixed well.
Leave in the fridge at least two hours or overnight. It can sit like this for two days or sometimes more before you use it.
When you're ready to use it, drain off the marinade into a small bowl and put your tofu on a plate between at least 3 layers of paper towels. Place another plate on top and let the liquid drain off.
*The more liquid you get out, the better it will cook
Then make your stirfry, and for extra flavor, use the liquid you drained off to cook your rice noodles or rice in.
Cook the tofu last.
In a preheated skillet at med/high place two tablespoons of the oil of your choice. I find light sesame oil to be just perfect.
Dump the tofu in the hot skillet and fry on all sides until heated through.
*don't over cook or it can get crumbly
That's all there is to it. Add the tofu to your stir-fry and dig in.
I hope you all enjoy this. I try to eat tofu at least once a week like this, but I'm not a vegetarian, so sometimes I find it hard to do. You can also take the cold drained tofu and add it to a salad, and sprinkle on some sesame seeds. It's all good!
That sounds really good.. I've only ate tofu a handful of times, they had it at the grocery store already cooked and marinaded. It was very tasty! I'll have to give this one a try.. :D
